Whenever Using Fresh Tomatoes...
Fresh tomato slices or dices make an excellent adornment to any red pizza, but if you've ever tried simply placing them on top of a pizza you notice quickly that they tend to leak thier natural water into your pizza, resulting in a soggy mess!
Have no fear, because there is an answer!
By placing your tomato slices in between two paper towels, with a medium amount of salt on them, and leaving them for about twenty minutes, the salt and the towels will absorb the excess water and leave tasty, pizza-safe, tomato slices.
Another alternative is to lay the slices in a pan with a light coating of olive oil, a little salt, and if you have some, a little rosemary, and bake for ten minutes at 325 degrees, while this does not preserve the "fresh sliced tomato" look as well, it is a very delicious way to avoid soggy pizza.
