Tomatillo Salsa
A green tomato salsa with a little kick...
1 lb ripe Tomatillos (Shells removed)
3 cloves garlic, minced
1 small white onion, julienne
3 Hot Finger Peppers (Green)
1 tsp salt
1 tsp pepper
1/3 cup water
2 Dashes Red Wine vinegar
Directions:
In a medium sauce pot, combine all ingredients and heat on high.
Once mixture begins to boil, turn heat to low and simmer with top on pot for 30 minutes.
Pour mixture into a blender.
NOTE: Make sure you let the mixture cool a bit because if it is too hot, the top will blow off the blender and you will have food everywhere.
Once in blender, blend until smooth. Salsa is done.
