Roasting A Green, Red, Or Yellow Pepper
Place the whole pepper on an open flame grill.
The skin of the pepper will begin to blister and blacken - This is what you want.
NOTE: The heat is pulling the moisture out of the skin so that it can be more easily removed and the pepper will be left full of flavor extremely tender.
Once the entire pepper has gone through this process, remove it from the grill and run under cold water.
Take a chef knife and cut off the top of the pepper.
Remove all seeds and remaining insides.
Once again, run the pepper under cold water and remove the skin.
NOTE: The running water will make it easier for you to remove the skin and ensure minimal damage to the pepper.
Now you can bring the pepper to a cutting board and prepare it for the pizza...
Julienne the pepper and it is ready to go.
Ed's note: This can be done over an indoor gas burner if you do not have a grill or if it is winter time, but I would not recommend it for someone who has never done it before.
