How To: Scale Your Pizza Recipe
You probably see that we have a disclaimer on every recipe saying we scale our pizzas to a 14" (large) round pizza, this is approximately the equivalent, also, of an 11"x15" baking pan.
Most pizza chains use the following sizes; to adjust your recipe, use the following percentage changes to ALL ingredients:
Small, 10" "personal" pizza : -50%
Medium, 12" pizza : -25% (This is the size of most frozen pizzas)
Large, 14" pizza : -no change-
X-Large, 16" pizza : +30%
A Small pizza will feed one hungry person, or two light eaters, a Medium is good for 2-3 people, a Large will fill 3-4, and an X-Large will fill 4-5.
