How To: Prepare a Pizza Pan
Proper preparation of your pizza pan will make a huge difference in the outcome of you homemade pizza.
Dough will stick to a metal pan, even when cooked, creating a hard to slice and remove pizza, and also a mess that is niether easy or fun to clean up.
To avoid this you can do one of two things:
1: spread a layer of cornmeal or semolina flour on the pan to act as a separator between the dough and the pan.
This method works well, though many people dont like the grainy cornmeal on the bottom of their pizza.
2: spread a thin layer of olive oil on the pan.
This acts as a lubricant for the pizza, and the hot oil will also help cook the bottom of the crust.
Option 2 is generally more effective, but less healthy.
