Thoughts On Oven Temperature
Most professional pizza joints have large, gas fired, pizza ovens that are heated anywhere from 650 to 800 degrees!
Most home chef's try to cook pizza at around 400 degrees.
Notice a difference??
While generally the rule is "as hot as your oven goes" for homemade pizzas, there are occasions when a lower temperature is desireable:
If you notice that your pizza is burning without cooking all the way through, try lowering the oven temperature by 50 degrees and see if your pizzas cook better.
If you desire a very soft crust, cook at a lower temperature, around 350 to 400 degrees.
If your oven has "hot spots" that burn small areas of the pizza, while leaving others uncooked, lower the temperature 50 degrees and see if the problem resolves.
