Spicy Red Sauce (Arrabiata)
A red sauce with a little zing...

Level of Difficulty: Intermediate.
Ingredients:
Note: This Recipe makes enough sauce for approximately four large pizzas! scale accordingly.
5 Cups Diced Roma Tomatos (approx. 2 lbs fresh tomatos)
4 Cloves Garlic, Minced
3 Tablespoons Crushed Red Pepper
3/4 Cup Diced White Onion
3/4 Cup Diced Green Pepper
12 oz. Tomato Paste
1/2 Cup Water
2 teaspoons Basil
2 teaspoons Oregano
1 teaspoon Black Pepper
2 teaspoons Kosher Salt
1 Tablespoon Sugar
2 Tablespoons Grated Parmesan Cheese
2 Tablespoons Extra Virgin Olive Oil
2 Dashes Red Wine Vinegar
Directions:
Combine ingredients (except for tomato paste) in a medium sauce pot.
Heat on high until liquid begins to boil.
Turn down to medium and simmer for 25 minutes.
Remove pot from heat.
Pour mixture through strainer to remove excess liquid.
Pour 1/2 mixture into a blender.
If mixture is too hot, the blender lid will blow off so by only pouring half of the mixture at a time, this should limit the potential of such an occurance.
Blend mixture in blender.
Add the tomato paste to the mixture while in the blender to fully combine.
Once mixture is blended, remove from blender and put back into sauce pot.
Leave on low heat until ready to sauce pizza.
NOTE: Always make sure to taste your sauce during each step and adjust seasoning according to taste. More Pepper will result in a spicier sauce. Add sugar to increase intensity and flavor (not salt).
