Romano Cream Pizza Sauce

For a True White Pizza...

Total Prep / Cook Time: 15-25 minutes
Level of Difficulty: Intermediate.

Ingredients:
1 Cup Heavy Cream
1 Clove Garlic, Minced
2 Tbs Butter
1/2 cup Grated Pecorino Romano Cheese
2 Tbs Butter

Directions:

In a medium saucepan, bring cream to a simmer.

When cream begins to thicken, add the pecorino romano cheese and turn heat to low.

On the side, combine 2 Tbs melted butter and 2 Tbs flour.
This will create what is known as a "roux" and act as a thickening agent for the sauce.

Once the roux is complete, whisk into the cream and cheese mixture until smooth.

Season with salt and pepper to taste and sauce is complete.
