Grilled Tenderloin Pizza

Ingredients:
Note: all recipes on this site are scaled to a 14" round large pizza, for larger or smaller pizzas, please scale accordingly.
1 Traditional Dough
3/4 Cup Spicy Red Tomato Sauce
8 oz. Boursin Cheese
12 oz. Beef Tenderloin
1 Medium Onion
2 Cups Sliced Mushrooms
1 Garlic Clove (minced)
Flour
Olive Oil
Garlic Powder
Onion Powder
Kosher Salt
Ground Black Pepper
Dried Oregano
Directions:
First, prepare the tenderloin:
Combine Garlic Powder, Onion Powder, Kosher Salt, and 1 Teaspoon of Ground Black Pepper in a bowl.
Lightly dust all sides of the beef tenderloin with this mixture.
Grill steak for two minutes on each side at high heat on an outdoor grill, if possible, otherwise use a skillet or the oven.
*The purpose of cooking the tenderloin at high heat for a short amount of time on each side is to lock in the flavor. The steak will continue to cook in the oven with the rest of the pizza.
Slice tenderloin into slices approximately 1 ½ inches in length, and ¼ inch in width.
Second, prepare other toppings:
Julienne onion into slices as long as the onion and approximately 1/8 inch in width.
In a medium bowl, toss sliced mushrooms, minced garlic, and julienned onion with 1 ½ tablespoons of olive oil, ¼ teaspoon Kosher Salt, 1 Teaspoon of Black Pepper, and 2 Teaspoons of Fresh Oregano.
Pour ½oz of Olive Oil into a medium sized sauté pan and heat on medium-high.
Add mushrooms, onion, and garlic mixture.
Cook mixture until the mushrooms are soft and the onions are translucent.
Once finished, remove from heat and let cool.
Finally, prepare the pizza itself:
Preheat oven to 550 degrees
*if using a pizza stone, make sure the oven is preheating/heated for at least twenty minutes prior to putting the pizza into the oven.
Sprinkle a thin layer of flour on a flat preparing surface, place dough ball onto flour and roll to get a light coating of flour.
Using a rolling pin or your hands, stretch dough out evenly to the size of the pan.
Prepare the pan using either cornmeal or olive oil, and place dough onto pan.
Spread sauce evenly across dough.
Spread approximately ¼ of the Boursin Cheese on the pizza to use as a base to hold ingredients.
Evenly distribute the mushroom, onion, garlic mixture across the entire pizza.
Place tenderloin slices on top of layered veggies and cover entire pizza with the remaining cheese.
Place pizza in oven and cook for 11 to 14 minutes, until crust is golden brown, cheese is melted, and steak is cooked through.
To enhance the flavor of the crust try a garlic oil glaze.
