Mushroom and Brie Pizza
A mushroom pizza with a little stronger character...
Total Prep / Cook Time (not including dough / sauce) : 45-60 minutes.
Level of Difficulty: Intermediate.
Ingredients:
Note: all recipes on this site are scaled to a 14" round large pizza, for larger or smaller pizzas, please scale accordingly.
1 Classic Dough
3/4 Cup Spicy Red Tomato Sauce
1 Small Brie Wheel, sliced very thin
1 Cup Sliced White Mushrooms
Flour
2 Tablespoons Butter
2 Tablespoons Madeira Wine
Kosher Salt
Ground Black Pepper
Dried Oregano
Directions:
Heat 2 tablespoons butter in a medium frying pan at medium-high heat.
When melted, pour in mushrooms with a small amount of salt and pepper.
When mushrooms begin to release natural juices (at about 4-6 minutes) pour in 1/8 cup Madeira wine.
When mushrooms have absobed majority of wine (about 2 more minutes), remove from heat, let cool.
Preheat oven to 550 degrees
*if using a pizza stone, make sure the oven is preheating/heated for at least twenty minutes prior to putting the pizza into the oven.
Sprinkle a thin layer of flour on a flat preparing surface, place dough ball onto flour and roll to get a light coating of flour.
Using a rolling pin or your hands, stretch dough out evenly to the size of the pan.
Prepare the pan using either cornmeal or olive oil, and place dough onto pan.
Spread sauce evenly across dough.
Place Brie cheese across pizza. Complete coverage is not neccesary, as the cheese will melt and expand.
Evenly distribute mushrooms across entire pizza.
Sprinkle a small amount of oregano, salt and pepper over pizza.
Place pizza in oven and cook for 9 to 12 minutes, until crust is golden brown and cheese has become soft and spread.
To enhance the flavor of the crust try a garlic oil glaze.
