Mediterranean Style Pizza
A menagery of southern-European flavors...
Total Prep / Cook Time (not including dough / sauce) : 60-75 minutes.
Level of Difficulty: Intermediate.
Ingredients:
Note: all recipes on this site are scaled to a 14" round large pizza, for larger or smaller pizzas, please scale accordingly.
1 Herbal Dough
3/4 Cup Classic Red Tomato Sauce
4 oz. Shredded Mozzarela Cheese
4 oz. Crumbled Feta Cheese
1/2 Cup Roasted** Red Pepper, Julienne**
1/2 Cup Roma Tomato, Diced
1/2 Cup Spinach, Chiffonade**
1/2 lb Chicken Breast
Flour
Olive Oil
Kosher Salt
Ground Black Pepper
Directions:
Salt and pepper the chicken breast.
Coat a medium sized saute pan with olive oil.
On medium heat, cook chicken until halfway done.
Remove chicken from pan and dice into cubes approximatley 1/4 inch by 1/4 inch.
NOTE: Roasted Red Peppers are availbale in a jar at most grocery stores, however, if you have the time, try roasting your own!
Preheat oven to 550 degrees
*if using a pizza stone, make sure the oven is preheating/heated for at least twenty minutes prior to putting the pizza into the oven.
Sprinkle a thin layer of flour on a flat preparing surface, place dough ball onto flour and roll to get a light coating of flour.
Using a rolling pin or your hands, stretch dough out evenly to the size of the pan.
Prepare the pan using either cornmeal or olive oil, and place dough onto pan.
Spread sauce evenly across dough.
Place a light layer of mozzarella on top of the sauce to act as a binding agent for toppings.
Evenly distribute chicken, roasted peppers, roma tomatos, and spinache across entire pizza and add the remaining mozzarella and feta cheese.
Place pizza in oven and cook for 10 to 13 minutes, until crust is golden brown and cheese has just begun to brown.
To enhance the flavor of the crust try a garlic oil glaze.
