Chicken Potato Pizza
A down-home dinner, on a pizza...
Total Prep / Cook Time (not including dough / sauce) : 90-105 minutes.
Level of Difficulty: Advanced.
Ingredients:
Note: all recipes on this site are scaled to a 14" round large pizza, for larger or smaller pizzas, please scale accordingly.
1 Traditional Dough
3/4 Cup Classic Sauce
8 oz Chicken Breast
3 Medium Redskin Potatoes, Diced
6 Slices of Bacon, Diced
1 tsp Thyme
1 tsp Rosemary
1 oz Monterey Jack cheese
3 oz Mozzarella Cheese
4 oz Cheddar Cheese
Directions:
To ready chicken:
In a large saute pan, heat up 1 oz oil on medium heat.
Sprinkle salt and pepper over chicken and place into pan.
Cook chicken through.
Remove chicken from pan and shred with a fork.
To ready bacon:
In a medium saute pan, place bacon in strips and cook until crispy.
Remove from pan and dice.
To ready potatoes:
Fill a medium sauce pot halfway with water, bring to boil.
Add diced potatoes (skin them first, if you desire).
Cook potatoes until softened.
Enough to take away the crunch, but not enough to mash.
Once cooked, strain away as much water as possible.
Toss potatoes with olive oil, salt, pepper, thyme, and rosemary.
Heat a medium saute pan and add potatoes.
Cook until potatoes begin to brown.
To prepare pizza:
Preheat oven to 550 degrees
*if using a pizza stone, make sure the oven is preheating/heated for at least twenty minutes prior to putting the pizza into the oven.
Sprinkle a thin layer of flour on a flat preparing surface, place dough ball onto flour and roll to get a light coating of flour.
Using a rolling pin or your hands, stretch dough out evenly to the size of the pan.
Prepare the pan using either cornmeal or olive oil, and place dough onto pan.
Spread sauce evenly across dough.
Mix together Mozzarella, Cheddar, and Monterey Jack cheeses.
Spread a light layer of cheese on top of the sauce to act as a binding agent.
Spread the chicken across the entire pizza making sure that coverage is even.
Spread other toppings evenly across pizza.
Sprinkle the remaining cheese across the pizza.
Bake for 11-14 minutes, or until crust is golden brown and cheese is just beginning to brown.
