BBQ Chicken Pizza

An All-American twist on pizza...

Total Prep / Cook Time (not including dough / sauce) : 75-90 minutes.
Level of Difficulty: Advanced.

Ingredients:
Note: all recipes on this site are scaled to a 14" round large pizza, for larger or smaller pizzas, please scale accordingly.

1 Traditional Dough
3/4 Cup of Your Favorite BBQ Sauce
4 oz. Shredded Mozzarella Cheese
4 oz. Shredded Montery Jack Cheese
12 oz. Cleaned, Boneless Chicken Breast (approx. 2-3 breasts)
1 Large Onion
1 Garlic Clove (minced)
1 Can Chipotle Peppers (pureed)
1 Lime
Flour
Olive Oil
Canola or Peanut Oil
Paprika
Kosher Salt
Ground Black Pepper

Directions:

 To ready chicken:

Take 1 full can of Chipotle Peppers with sauce and puree in a blender or food processor.

Add ½ Tablespoon of Kosher Salt and ½ Tablespoon of Course Ground Black Pepper.

Take chicken breasts and place into a medium sized bowl.

Juice lime into bowl.

Pour Chipotle Pepper mixture onto chicken breasts covering as much as possible.

Let sit in refrigerator for twenty to thirty minutes to let flavor develop.

 To ready other toppings:

Slice onion into paper thin slices.
*If that is not possible, make onion slices as thin as possible.

Once sliced, put all onion into a bowl and fill with water.

Let onions sit in the water for about five minutes before straining.

Mix together the flour, one tablespoon of each salt, pepper, and paprika. Take the strained onions and put them into the flour mixture making sure to coat each onion evenly.

In a large frying pan, heat up oil.
*To test readiness, drop one coated onion into the oil. If it sinks, then the oil is not ready. If it begins to bubble and rises to the top, the oil is ready.

Once the oil is ready, fry off the coated onions in small batches until crunchy.

When removing onions from oil, place onto a plate that is lined with a few paper towels to soak up excess oil.
*Onions prepared this way are also known as Tobacco Onions.

 To finish chicken:

Remove the chicken from the refrigerator and cook on a grill if available - If not, cook in an oven heated to 325 degrees for approximately 8 to 10 minutes. *It is alright if the chicken is not quite fully cooked as it will continue to cook once in the oven on the pizza.

Once the chicken is ready, place on a cutting board and dice into medium sized pieces. You want to shoot for ½ inch by ½ inch cubes.

 To prepare pizza:

Preheat oven to 550 degrees
*if using a pizza stone, make sure the oven is preheating/heated for at least twenty minutes prior to putting the pizza into the oven.

Sprinkle a thin layer of flour on a flat preparing surface, place dough ball onto flour and roll to get a light coating of flour.

Using a rolling pin or your hands, stretch dough out evenly to the size of the pan.

Prepare the pan using either cornmeal or olive oil, and place dough onto pan.

Spread sauce evenly across dough.

Mix together Mozzarella and Monterey Jack cheeses.

Spread a light layer of cheese on top of the BBQ sauce to act as a binding agent.

Spread the chicken across the entire pizza making sure that coverage is even.

Sprinkle the remaining cheese across the pizza.

Place onions on top of pizza.

Bake for 11-14 minutes, or until crust is golden brown and cheese is just beginning to brown.
